DIXIE'S PICK A RIB SOUP

 Serve with Garlic toast and BBQ ribs, maybe a baked potato and you are back at the pick a rib again. Love ya, Dixie

 

Ingredients:

1 big package of Pork Ribs with bone in

1 big can of  Contadina Tomato Puree

2 large onions

Celery

Carrots

Lowry's Seasoning Salt

Salt and Pepper

Small Macaroni

 

OK.  Here goes: 1 big package of Pork ribs w bones Boil the ribs until they are tender (my mom says till the meat is one inch away from the bone) Get the ribs out and let the juice cool, then put the pot of juice in the frig overnight. The next day, skim off the layer of fat on the top of the juice. Then add about four cups of water and start heating the juice and water to a boil. While it is heating up, add a big can of tomato puree I think I use Contadina brand but any will do. Keep heating it up, Dice 2 large yellow onions, how much celery you want, and how much carrots you want. All the veggies Dice small. Go ahead and season the soup, this is the secret... Lowry's Season Salt l put about a tablespoon for every 2 quarts of soup, or to taste, salt and pepper to taste, The soup will probably be boiling now and add the veggies and cook them until tender. Taste the soup and make sure it is good and the veggies are tender then add the little round salad macaroni and boil for a few minutes till the macaroni is done.
